This is how I power skilled my Smithing to 100 and Enchanting currently to 70 in just a few hours. This may require a good starting gold amount roughly 3k. Using a melee character.
On your way to Whiterun after leaving Riverwood, make sure you slaughter all the local fauna along the road and collect as many pelts/skins that can you can.
When you get to Whiterun you'll have access to two blacksmiths and an enchanter/pawn shop that sell petty/lesser soul gems. Their inventory reset ever 48 game hours (You can also take the horse carriage to each town looking for more pawn shops to buy/steal more petty soul gems, you'll need quite a few a little more than 100)
The Drunken Hunter's archery shop sells (atleast in my game it did) a soultrap bow. Buy this (or aquire in anyway you see fit). Disenchant the bow to have access to soul trap enchanting from now on. Use any filled soulgem you want to put this enchant on the best weapon that you have. It doesn't need to be more than 1 second.
After you load up on soulgems and have a soultrap weapon, go outside around Whiterun and slaughter more deer/foxes/rams/cows this will give you skins aswell as trap the souls into your gems. You can also do a quest if you'd like to break up the monotomy and get souls/gold while you do it.
When you've got a sufficient amount of filled soulgems, head back to Whiterun and begin a crafting run. Disenchant any magic weapons you might have found. (Anything with Fear will yield you quite alot of profit.)
Head to the Skin tanner and turn your pelts into Leather than leather into Leather Strips (Alternatively you can just make Hide armor with leather + strips but I didn't want to balance the two). Buy as many Iron Ingots/Ore from Warmaiden and Skyforge and craft Iron Daggers (This will cost 1 Iron Ingot + 1 Leather Strip).
You will level up very fast from this. Place perks into Smithing/Enchanting. When you've used all your Iron Ingots, head to the Jarl's court mage room to the Enchanting table and enchant the new Iron Daggers you've made with any spell you've got using your petty soulgems. (If you have the Fear spell you should be able to yield 120-150 gold per dagger selling them back to the Blacksmiths) This will keep your Gold even if not more while leveling Enchanting/Smithing at the sametime.
Rinse repeat the process until you have your Dragon Armor and badass enchanted Ebony War Axes.
